I gave this 3 forks and not 4 for three reasons - the whipped cream, the presentation and the texture of the pastry cream. I made a graham cracker crust instead of the chocolate cookie crust called for in the recipe, which added a nice hint of salt that I thought rounded out the other two flavors well. Some reviewers felt the pastry cream was too sweet, but with the semi-sweetness of the ganache I thought it was a perfect pairing. Complemented nicely by the sweetness of the pastry cream. Not too sweet, just sweet enough, and the texture is to die for. The vanilla pastry cream is especially good and very similar to what my mom used to fill her cream puffs with when I was a kid. I used chocolate graham cracker cookies instead of chocolate wafers, but I think that made it better. Btw for folks having trouble cutting the crust, try using a serrated steak knife-it'll cut right through that ganache layer. Next time I make this I'll look for a pastry cream recipe without it. The only head-scratcher for me was the pastry cream recipe, which calls for flour as an additional thickener (new for me). I also left the whipped cream unsweetened. I used a salted caramel cookie for the crust, and bittersweet instead of semisweet chocolate. I made a few adjustments based on some comments about sweetness. On an interesting note, when combining the 3 linears, it created a more tactile feeling than a MX brown.This is an amazing pie. I've come to the conclusion that it's the cherry top which is causing such tactility (Swapped the top of a "tactile" cherry pie, with a smooth linear one and the inverse effect happened). I've lubed and filmed about 10 switches, around 7 of them are relatively normal, the other 3 are tactile.
